S&rsquo;il s&rsquo;agit d&rsquo;une sorbeti\u00e8re avec un accumulateur de froid, il aura s\u00e9journ\u00e9 pr\u00e9alablement au cong\u00e9lateur mais autrement il faut penser \u00e0 mettre le r\u00e9cipient au r\u00e9frig\u00e9rateur suffisamment \u00e0 l&rsquo;avance. La cr\u00e8me doit elle aussi avoir \u00e9t\u00e9 r\u00e9frig\u00e9r\u00e9e. Lorsque la cr\u00e8me est mont\u00e9e en chantilly bien ferme, y ajouter le sucre et les framboises r\u00e9duites en pur\u00e9e au mixer.
