Faire revenir tous les l\u00e9gumes dans une sauteuse avec un peu d&rsquo;huile d&rsquo;olive. Lorsqu&rsquo;ils sont dor\u00e9s, ajouter le riz arborio et le m\u00e9langer avec les l\u00e9gumes jusqu&rsquo;\u00e0 ce qu&rsquo;il devienne translucide. Ajouter la moiti\u00e9 du bouillon et laisser cuire \u00e0 couvert jusqu&rsquo;\u00e0 ce que le riz ait absorb\u00e9 tout le liquide. Retirer alors le couvercle et ajouter l&rsquo;autre moiti\u00e9 du bouillon. Laisser cuire jusqu&rsquo;\u00e0 ce que le rizotto soit bien cuit mais pas sec.
