L&rsquo;\u00e9taler de sorte \u00e0 former un rectangle et la conserver au r\u00e9frig\u00e9rateur avant usage.<br \/>\n<strong><br \/>\nPr\u00e9paration de la quiche<\/strong><br \/>\nMettre le four \u00e0 pr\u00e9chauffer \u00e0 200\u00b0. Couper les poireaux ou les courgettes en fines rondelles. Si on utilise des blettes, les couper en tron\u00e7ons et ciseler leurs feuilles. Les faire revenir \u00e0 la po\u00eale avec tr\u00e8s peu de mati\u00e8re grasse. Mettre la p\u00e2te bris\u00e9e sur une plaque de four garnie de papier sulfuris\u00e9 ou graiss\u00e9e. Garnir avec les courgettes recouverte d\u2019un m\u00e9lange d\u2019\u0153uf et de yaourt. Assaisonner avec sel, poivre et muscade. Mettre ensuite le chorizo d\u00e9coup\u00e9 en fines lamelles ainsi qu\u2019une couche de fromage r\u00e2p\u00e9.
